Yet again, another bread recipe

What do you like in your bahn mi?

It is about a month since quarantine, and I've just been constantly cooking everyday. I hope this time had brought some positivity in ones' life. For me, I had been going crazy, but also have been getting creative. I'm constantly hungry to learn more recipes and techniques about different foods and cultures. Most of the food I've been wanting to cook are the ones that remind me of growing up in Hawai'i. It doesn't get better than that!!! In high school, I ate at pho restaurants quite frequently because It was so cheap. One dish was the bahn mi sandwich. It costed me only $5, which was basically my allowance for the week. There's just so much going on in one bite, what's not to like? I simply hopped on the internet and researched many recipes. I took notes and this is what I got. It's not perfect, but tastes good to me!


Bahn Mi Baguette Recipe

(Prep Time: about 2.5 hrs Cook Time: 15-20 min Yield: 4 - 6 Baguettes)


INGREDIENTS:

2 Cups All Purpose Flour, Sifted (Keep 1 Cup Separate)

1 1/4 Tbs Yeast

3/4 Cup Water, Warm

1 Tbs Sugar

Pinch of Salt

Spray Bottle with Water

Baking Pan of Water



DIRECTIONS:

1. Combine Water, Yeast, Flour (1 cup), and Sugar in a bowl. Set aside for 30 minutes - 1 Hour to create a "Sponge." It will be like a pillow of bubbles.

2. Once the sponge is created, incorporate the remaining cup of flour.

3. Knead the dough until It is smooth, about 10 minutes. Form into a ball.

4. Place dough in a bowl, cover with a towel, and let It rise for 1 hour, until It has doubled in size.

5. After rising, place on a clean surface, and cut into 4 equal portions.

6. Form the buns by rolling It into a tube like figure, then rolling in from the edges, creating a football shape.

7. Place on a piece of parchment (but not on a baking sheet), covered with a towel. Let It rise for another hour. (I don't use plastic wrap, as It stuck onto the dough)

8. Preheat the over to 425 degrees Fahrenheit, placing a pan with water, on the bottom of the oven. Also, preheat baking pan in the oven before putting baguettes onto the pan.

9. Using a paring knife or blade, cut a slit across of the bread (about 1 inch from each end).

10. Remove preheated baking sheet, and transfer dough (with parchment paper) onto the pan and spray dough with water.

11. Place baguettes into the oven, spray the sides of the oven to create some steam.

12. Bake for about 15-20 minutes, rotating It halfway, until golden brown and crispy.

13. Cool on a rack for about 10-15 minutes, and serve.


This recipe makes about 4 4-6 inch baguettes, or about 6 half sized baguettes. It will be very crispy on the outside, and soft in the inside. Great for ASMR.


This type of sandwich could be customizable to what you like. I like everything!! My choice of protein is pork, oink oink. I had also made sandwiches using tofu! Never limit the possibilities because they're unlimited. Enjoy with kids and family for breakfast, lunch, or even dinner!
