Corned Beef Patties

This recipe is from my childhood. I grew up with all of my sisters, cousins, aunties, uncles, and grandparents. This is one of our go-to breakfasts. Yes, we were allowed to use the stove as a kid! We cooked a lot of simple things like saimin, spam, fried rice, etc. The corned beef patties though, they were a hit! I remember my little sister and I would wake up early in the morning and cook breakfast. Our older sisters taught us how to make these patties. I can't believe I cook this to this day, but hey, it's freaking good. It's nice and crispy on the outside, a bit soft in the inside. Then, you get a bit of sweetness from the onion, spice from the garlic, and salt from the corned beef itself but a different salt from the fish sauce. Haha, ain't your mouth watering right now? I challenge you to whip this up for yourself or your family!

Corned Beef Patties Recipe

(Prep Time: 5 min Cook Time: 5 min Yield: 4 Servings)

INGREDIENTS:

1 Can Libby's Corned Beef

3 Tbsp Onion, Minced

2 Tbsp Green Onion, Chopped

2 Tbsp Garlic, Minced

1 Egg

1 Tsp Fish Sauce

1 Tbsp Cornstarch

Heaping Pinch of Pepper


DIRECTIONS:

1. In a medium mixing bowl, add in all ingredients, mix well.

2. Grab a tablespoon of the mixture, roll into a ball, then gently press down to form a patty.

3. In a pan, on medium heat, add in patties.

4. Cook about 1-2 minutes on each side until golden brown and crispy.

5. Serve with rice.


Enjoy breakfast a different way!
