Hawaiian Style Chicken Noodle Soup...
More ginger, more better
Chicken long rice is so easy to make! It's great for the cold nights, when you're missing home, or even when you're hungover :P hehehehe. This is a simple recipe that I use when I need to whip up a quick meal. I love the ginger flavor in the broth and I enjoy eating the chunks of ginger. It's a great pick me up after a night of drinking too! For a bit more flavor, I do add in a pinch of sugar and a dash of fish sauce, but if you're watching your sodium and/or sugar intake, you could cut that out. This goes great with kalua pig, laulau, or even just a scoop of rice. I hope you enjoy this recipe just as much as I do.
Chicken Long Rice Recipe
(Prep Time: 5 min Cook Time: 30 min Yield: 2-3 Servings)
INGREDIENTS:
2 Bundles Bean Thread Noodles
2 Chicken Thighs, Bone in
1/4 Onion, Sliced
2 Cup Water
1-2 Tbsp Chicken Bouillon Powder
2 Pcs Ginger, Sliced
1 Tsp Sesame Oil
1-2 Tsp Soy Sauce
Green Onion for Garnish
*OPTIONAL*
1-2 Tsp Fish Sauce
Pinch of Sugar
DIRECTIONS:
1. In a pot, add in chicken thighs and cold water. Cook over medium heat and boil.
2. Once chicken boils, add in sliced ginger. Cook until chicken is tender.
3. Remove chicken, shred, and set aside.
4. Add in bean thread noodles and onions. Cook for about 3 minutes.
5. Add in chicken bouillon powder, and mix well. Cook for another 3-5 minutes.
6. Turn off heat, garnish with green onions, soy sauce, and sesame oil.
7. Serve & enjoy!
