Zippy's Copycat
This recipe hits home for me. I hate bread pudding anywhere else but Zippy's!! It starts from the smell of it... the cinnamon aroma while its baking.... golly. Then when it's still nice and hot, I like to add a scoop of vanilla ice cream... The vanilla ice cream then slightly melts all onto the bread pudding and it now has a nice thick and creamy sauce... UGHHHHHHHHH. So freaking good!! Especially if you have this after a fat meal. I could get so full from a meal, but will always have room for dessert. This recipe I tried to remember from when I worked at Zippy's... I used up some leftover pastries. Feel free to use whatever you have, donuts work too!!
Bread Pudding Recipe
(Prep Time: 5 min Cook Time: 45 min Yield: 9 Servings)
INGREDIENTS:
20 OZ Pastries/Bread/Donuts
2 Cups Whole Milk
2 Large Eggs
2 Tsp Cinnamon
2 Tsp Vanilla Extract
DIRECTIONS:
1. In a medium mixing bowl, add in milk, eggs, cinnamon, sugar, vanilla. Mix well.
2. Tear or dice up pastries into small cubes, about 1/2 - 1 inch pieces.
3. Add in diced up pastries into the milk mixture. Combine well.
4. In a parchment paper lined and greased pan, pour mixture in and distribute evenly.
5. If you want to add in raisins or toppings, this is when you want to add them, press them down into the mixture.
6. Let it sit for 15 minutes.
7. Preheat oven at 350 degrees fahrenheit. Bake for 45 minutes on the top shelf.
8. Rest for about 2 hours, cut and serve (I suggest with ice cream!!!!)
