Baked Sushi Casserole

Mix It all together and put It in the oven!

I don't really know what to call this, but let's call It a baked sushi casserole... hehe
Make it how you like it
This dish is another simple one. I love to make these for company coming over because It could fill them up, It's cheap, and easy! I loved eating, but to me It was a delicacy because I never had It often. I just throw in whatever I have in my fridge or pantry and It comes out good. There's various versions, but this is mine. I see many recipes with sour cream in them, feel free to add It if you have It. In my fridge, I don't carry It often because It doesn't last too long, nor do we eat It often. Customize It to your liking!! If you want to add more mayo, use different sausage, change the sweetness or sourness of the sushi rice, etc.

Sushi Rice
(Prep Time: about 15 min Cook Time: 15 -20 min Yield: 4 Servings - 9x9 Baking Pan)
INGREDIENTS:
5 Tbsp Rice Vinegar
2 Tbsp Sugar
3 Cups Cooked Rice, Room Temperature
Pinch of Salt
DIRECTIONS:
1. Combine vinegar, sugar, and salt. Mix well.
2. In a mixing bowl, add in rice, and half of the rice seasoning.
3. Mix until each grain of rice is coated. I carefully use my hand (gloved), making sure not to mash the rice.
4. Add in the rest of the rice seasoning to taste.
5. Transfer rice into a 9 x 9 baking pan and spread evenly.
6. Sprinkle a light layer of Furikake (Seaweed Rice Seasoning) onto the rice.

Casserole Filling
(Prep Time: about 15 min Cook Time: 15 -20 min Yield: 4 Servings - 9x9 Baking Pan)
INGREDIENTS:
1 Package Imitation Crab (16 oz), small diced
1/2 - 1Cup Mayo
1 Tbs Garlic, minced
3 Tbs Onion, small diced
1 Piece Lapcheong (Chinese Sausage)
1 Tbsp Green Onion, chopped
1 Whole Lemon, squeezed
Pinch of Salt and Pepper
DIRECTIONS:
1. In a bowl, combine all ingredients.
2. Transfer into baking sheet, on top of rice.
3. Sprinkle more furikake on top of the crab mixture.
4. Preheat oven to 350 degrees Fahrenheit.
5. Bake for 15-20 minutes.
6. Feel free to finish off with a torch.
7. Enjoy and serve with some roasted seaweed, nori, etc.
