Kalbi - Beef Short Ribs

No grill, no problem!

OH MANNNNNNN. One of my favorite dishes that I bought at the kbbq joints back home in Hawaii (Mililani kbbq is the best), KALBI. I freaking love kalbi, but I honestly could care less about the kalbi tips (meat). My ultimate favorite is the bone. When it's charred to the max, that cartilage-y texture, sweet & savory, bonemarrow-y flavor... so effing good. If you know me, you know I will always ask for the bones at the dinner table. That's just me!! This recipe is easy and grill free. I live in an apartment and I am not allowed to bbq on my balcony so my hack? A TORCH. If no torch, use the broiler setting in the oven. Anyways, this is the simplest breakfast/lunch/dinner/snack, like everything else I cook hehe, and will make everyone happy.


Kalbi Beef Short Ribs Recipe

(Prep Time: 24 hrs Cook Time: 10 min Yield: 2-4 Servings)


INGREDIENTS:

1/2 C Soy Sauce (Dark Soy, not Aloha)

1/2 C Water

1/4 Brown Sugar

1/4 C Mirin

2 Tbsp Sesame Oil

1/4 Onion, Minced

3 Tbsp Garlic, Minced

1-2 Tsp Ginger, Minced

1/2 Tsp Pepper

Sesame Seeds

Green Onion

2 - 3 LBS Kalbi Short Ribs



DIRECTIONS:

1. Rinse Short Ribs to remove any leftover bone dust and set aside.

2. In a medium bowl, combine the rest of the ingredients and mix well.

3. In a pan (I used 13x9), place kalbi, then add the sauce.

4. Make sure that the kalbi is coated in the sauce.

5. Cover with saran wrap and marinate preferably overnight or 4 - 6 hours.

6.Transfer some marinade into a separate container to use for basting.

7. Heat up a nonstick pan on medium heat. Add a little oil.

8. Cook Kalbi about 4 - 7 minutes on one side. Before flipping, baste with marinade. Repeat until desired doneness.

9. Once done, put kalbi pieces on a heat proof plate or pan and torch until it carmelizes.

If you use the broiler setting, place on a lined baking sheet, broil about 5-10 minutes.

10. Enjoy!



I served this Kalbi as a filling for tacos. You could just serve it over rice. If you have a grill, use it! If not, it's okay baby!!! Torch it up.
