Kimchi Pork - Korean Inspiration

Fresh kimchi or a bit aged?


I love pork and I love kimchi. I had both sitting in my fridge for a while and decided to make kimchi pork! I have been watching K-Drama lately, and drool every single episode that shows some type of Korean food. I put my own twist on this dish. I enjoy an aged kimchi rather than fresh because I love the depth of flavor it gives, but feel free to use whichever you like. I also added some spice to it using gochugaru. This recipe is so easy, fast, and delicious! If you don't eat pork, maybe try it using beef or maybe tofu!


Kimchi Pork Recipe

(Prep Time: 5 min Cook Time: 15 min Yield: 2-4 Servings)



INGREDIENTS:

1/2 lb Thin Sliced Pork Belly, Sliced in Half

1/2-1 Cup Kimchi, Chopped

3 Tbs Kimchi Juices

1/4 Onion, Sliced

3-4 Cloves Garlic, Minced

1 Tsp Gochujang

1 Tsp Brown Sugar

1 Tsp Soy Sauce

Pinch Gochugaru

1 Tsp Sesame Oil

1-2 Tsp Rice Wine Vinegar

Green Onion Chopped, for garnish

Sesame Seeds for garnish





DIRECTIONS:

1. In a pan, add in pork and cook for about 3-4 minutes.

2. When pork is halfway browned, move pork on the outsides creating a circle in the center. Add in onions and garlic and cook for 2-3 minutes or until translucent.

3. Add in kimchi to the pan and cook for another 2-3 minutes.

4. Combine in remaining ingredients; kimchi juice, soy sauce, sugar, gochujang, gochujaru, sesame oil, and rice wine vinegar.

5. Saute for about 3-4 more minutes until everything is combined.

6. Garnish with sesame seeds and green onions.

7. Enjoy!



I like to enjoy this over a hot bowl of rice and other banchan. If I had any leftovers, I would warm it up and add a fried egg.
