Let's get that bread!
Pandesal is so simple but makes me so happy. I grew up eating this almost my whole childhood. I remember I would always help my nanang and tatang (grams & gramps) make their cup of coffee with 1 scoop of instant coffee, 1 scoop of creamer, and 2 scoops of sugar. Every morning before tending to the flowers around the house, we would sit together, have a cup of coffee and bread (I also drank coffee). We always had the Golden Coin brand of bread. I loved to dip the piece of pandesal into my coffee. In 2017, I moved to Las Vegas. Now, I can't get my dose of pandesal from Nanding's or Golden Coin :( I was forced to figure It out! Here's a recipe that I enjoy, and I hope you do too! I don't have a fancy mixure (not just yet) so I used manpower. No kitchenaid is needed.
Pandesal Recipe
(Prep Time: about 1.5 hrs Cook Time: 15 min Yield: 15-20 Pieces)
INGREDIENTS:
2 1/2 Cup All Purpose Flour, Sifted
2 Tbs Butter
1 1/4 Tsp Salt
1 1/4 Tbs Yeast
1 Cup Milk (I use Whole Milk)
1/4 Cup Water
1/4 Cup Sugar
Plain Bread Crumbs
**1 Tbsp Oil to grease hands**
DIRECTIONS:
1. Combine Water and milk into a microwavable cup or bowl for 1 min or until the temperature is between 120 F - 130 F.
2. Add butter and yeast into the milk and water, mix well.
3. Set aside and let yeast activate for about 10 minutes. It will become foamy.
4. In a medium mixing bowl, sift flour.
5. Add in salt and sugar, mix well.
6. Add in yeast mixture and mix until flour is incorporated and dough is smooth.
7. Cover with plastic wrap and proof for 45 minutes - 1 hour, until dough has doubled in size.
10. In a separate pan, add 1/4 cup of plain breadcrumbs. Set aside.
8. After proofed, grease hands with some oil (It will be very tacky) and punch down dough (I also have some flour on the side if I need to dust some onto the dough).
9. Measure into golf sized pieces and place on a lined baking sheet.
10. Roll into ball or shape into ovals (whichever you prefer)
11. Roll shaped dough into bread crumbs and place on baking sheet (1/2 inch gap)
12. Cover with a towel and proof for another 30 - 45 minutes.
13. Preheat oven to 350 F.
14. Bake for 15 - 17 minutes, until golden brown.
