PANI POPO!!! If you guessed that, you're right!!! I have been wanting this recipe forever. I have been looking for a recipe, mostly on Youtube, and could not find a recipe I liked. Last night, I asked my friend Maya for the recipe (from her cousin). Thank you so much!!!! I remember I had this at someone's party, and I never forgot about It since then. Sometimes I miss Hawai'i and all the bbq's/gatherings, whatever you want to call it. It's not the same here! Anyways, It's literally 100 degrees here in Nevada, so why not stay indoors and bake! This recipe is very simple, very easy, and very yummy! Change It to your liking, I would even add shredded coconut or even macadamia nuts. Please enjoy It as much as I do, or even more! Pani Popo Bun Recipe
(Prep Time: about 2 hrs Cook Time: 25-30 min Yield: 12-15 Pieces)
INGREDIENTS:
1 Cup Warm Milk
1 Tbsp Yeast
1/8 Cup Sugar
1 Tsp Salt
1 Large Egg
3 Tbs Butter, Softened
3 Cups All Purpose Flour, Sifted
Extra flour reserved on the side for dusting
DIRECTIONS:
1. Combine milk, yeast, and sugar. Mix well. Set aside for 5 minutes.
2. In a large mixing bowl, add in flour, salt, egg, and milk mixture.
3. Mix until It forms into a ball.
4. Transfer dough onto a floured surface and knead dough until smooth.
5. Place dough into a greased bowl and cover with a towel. Let It rise for about an hour until It has tripled in size.
6. Once dough has risen, punch down, then place onto a floured surface.
7. Form into a log shape, then cut the dough into even pieces.
8. Roll into a ball, and place into a greased baking pan about a 1/2 inch in between each ball (I used 13 x 9 for 12 buns).
9. Cover with a towel and rise for another 45-60 minutes until doubled in size.
10. Preheat oven to 350 degrees.
11. Pour half of coconut sauce over the buns, then use a brush to cover the buns completely.
12. Bake for about 25 minutes, or until golden brown.
13. Pour the rest of the coconut sauce over the buns, let It sit for 10 minutes.
14. Enjoy!
Coconut Sauce
(Prep Time: 10 min Cook Time: 5 min Yield: 12-15 Pieces)
INGREDIENTS:
2 Can Coconut Milk
1 Cup Sugar
3 Tsp Cornstarch
1 Tbs Water
Pinch of Salt
DIRECTIONS:
1. In a small bowl, combine cornstarch and water to make a slurry.
2. In a saucepan, combine coconut milk, sugar, salt, and slurry.
3. Cook over medium heat, constantly stirring, for about 5 minutes or until It thickens.
4. Place on the side until ready to pour over dough.
