Spruce up any meal with pickled veggies
Eating the same meals could get boring...

I get bored with some meals and want a bit of change. Sometimes, I even need to cut the fattiness of the foods we eat. I use this easy 4 ingredient recipe for a lot of my veggies that I eat with different meals. When I'm craving korean bbq, sandwiches, chicken katsu, salads... the list goes on. I typically pickle onions, jalapenos, cucumbers, carrots, and daikon, but feel free to try others. You could also change the ratio of ingredients, even add or subtract ingredients. If you want to add different herbs and spices, or even different sauces to the pickling process, there's no problem at all! I like to use mason jars, or even used recycled pasta sauce jars, whatever you have lying around! Do not use any metal containers.
Pickled Vegetables Brine Recipe
(Prep Time: about 1.5 hrs Cook Time: 15 min Yield: 15-20 Pieces)
INGREDIENTS:
1 Cup Vinegar (what you prefer, I use white)
1 Cup Sugar
1 Cup Water
Pinch of Salt
DIRECTIONS:
1. Combine all ingredients into a jar, and shake well.
2. Add in preferred vegetables and pickle over night.
3. Enjoy with whatever you want!
4. Store in the fridge.
