Got goat?
Pinapaitan is a very unique Ilocano soup. Traditionally, this soup is made with goat and animal bile. It has a very savory and bitter flavor that to some people it tastes amazing and to others it's not for them. When I was young, my tatang used to make this and I loved the tripe. To me, it was the best part out of the whole dish. I remember it was also called "Sinanglaw" but I could be wrong. I do remember the taste though. In this recipe, we subbed and/or omitted ingredients based on what's available to us and also what we like. Jerome usually cooks this dish for us, but I decided to give it a go. He usually adds intestines, but since I am cooking it, I said "NOOOOO." I do not like to clean intestines, but I am fine eating it. We also added beef tendon for some texture and omitted the "Pait" or bile because it can be hard to find, and also... the smell! I am not cooking that unless I have a "dirty kitchen" outside of the house. We also use beef chuck when making Pinapaitan, but we didn't have any beef except for a piece of steak which turned out great! I hope this recipe brings you warmth and I hope you enjoy it. It's great on a cold and/or rainy day or even good as a hangover meal. Feel free to use whatever you like and make it your own!
Pinapaitan Recipe
(Prep Time: 15 min Cook Time: 30 min Yield: 4-6 Servings)
INGREDIENTS:
1 lb Beef Chuck or Goat
1 Pkg Honeycomb Tripe, cleaned
1 Pkg Beef Tendon (Optional), cleaned
1/2 Onion, Sliced
6 Cup Beef Broth or use Beef Base (Follow instructions)
1 PC Ginger, Sliced
1 Pkg Sweet Sili or Finger Chillies
1-2 Tsp Patis (Fish Sauce)
Pinch of Salt
**OPTIONAL**
Bile
DIRECTIONS:
1. In a pot on medium high heat, saute beef for 3-4 minutes.
2. Add in ginger and onions, saute for another 2-3 minutes.
3. Add in beef tendon and tripe, saute for 2-3 minutes.
4. Add in sili and beef broth. Cover with lid and bring to a boil.
5. Once it comes to a boil, remove lid and use a spoon or ladle to remove impurities from the soup.
6. Let it simmer for another 15 minutes.
7. Add in fish sauce and season to taste.
8. Simmer for another 15 minutes.
9. Serve and enjoy!
