Tteokbokki - Korean Spicy Rice Cake

I love the chewiness!


Tteokbokki is a great appetizer or snack!! Everytime I go to a korean restaurant. My favorite place in Hawaii to get some is at Spoon Korean Kitchen in my hometown, Ewa Beach. The dish is so simple, but it always satisfies my tummy. You could always add different vegetables or even fish cake! I even love it with instant ramen noodles. If you want more spice, add more gochugaru. Remember, you could always add more, so start with a little first. I hope you enjoy this dish!

Tteokbokki Recipe

(Prep Time: 5 min Cook Time: 15 min Yield: 3-4 Servings)



INGREDIENTS:

2 Cups Anchovy Broth (I used anchovy powder and added to hot water)

1/2 Bag or 8 oz Rice Cake

1/4 Onion, Sliced

3-4 Cloves Garlic, Minced

2-3 Tbsp Gochujang

1 Tbsp Sugar

1 Tbsp Soy Sauce

1 Tsp Gochugaru

1 Tsp Sesame Oil

Green Onion Chopped, for garnish

Sesame Seeds for garnish



DIRECTIONS:

1. Soak rice cakes in boiling hot water for about 10-12 minutes.

2. In a pan, combine anchovy broth, onion, garlic, gochujang, sugar, soy sauce, and gochugaru and bring to boil.

3. Drain rice cakes, then add to mixture. Cook for about 5-7 minutes until rice cakes are soft.

4. Garnish with sesame seeds, sesame oil, and green onions.

5. Enjoy!



Try adding instant noodles, top it with cheese, or even adding spam! It really could go with anything!
